The new Impression by Secrets brand by Inclusive Collection, part of Hyatt Hotels & Resorts has been turning heads since it was first announced. The brand was created to provide an elevated level of luxury for guests, with Endless Privileges® inclusions and an adults-only atmosphere.

The opening of the first property in this category, Impression Moxché by Secrets in Playa del Carmen, was met with a positive response from travel advisors and their clients, and one aspect that plays a role in this feedback is the curated gastronomy, compliments of the Mexican women-led culinary team. Master Chef Karla Enciso and Pastry Chef Mara Carrillo have been creating magic behind the scenes since the resort’s opening in December 2022.

The Compass team had a Q&A with Master Chef Karla Enciso to learn more about the unique culinary aspects of  Impression Moxché by Secrets and how Mayan culture plays a role. Read on to discover why this resort is a place for foodie clients.

Q: What makes the culinary scene at Impression Moxché by Secrets unique, and what sets it apart from other resorts in this area? 

A: The Impression by Secrets brand aims to raise the bar of the all-inclusive experience through luxurious amenities, unparalleled personal service and elevated gastronomic experiences. Guests can expect the highest quality ingredients when dining at any of the 14 dining options available at Impression Moxché by Secrets. The resort is home to Teodoro, signature restaurant and one of the few fine dining experiences with an open-kitchen concept in Mexico. Thoughtfully crafted menus throughout the resort feature premium ingredients including lobster and Wagyu beef as well as organic and locally sourced produce such as purple pitahaya and more. In our efforts to cater to varied tastes and dietary restrictions, we also offer vegan and vegetarian dishes made with quality ingredients to guarantee both flavor and freshness.

Q: Can you share how Mayan culture and traditional recipes are incorporated into the menus and some examples of where guests will see this? 

A: At Impression Moxché by Secrets, we celebrate Mayan culture by integrating ingredients and cooking techniques that have existed for centuries. For example, the lobster taco – one of Teodoro’s most noteworthy dishes – is deeply rooted in Mayan culture. Its inspiration comes from stories of Mayan fishermen that once lived on the resort’s land and traditionally cooked lobster over firewood along with homemade tortillas.

Q: What restaurant or culinary experience is a must when visiting Impression Moxché by Secrets? 

A: Teodoro is a must. It offers guests an incredible experience where flavors and aromas translate into a seven-course dinner that combines both ancestral Mayan and Yucatan cuisine with French techniques, wrapped up with a premium service.

This November, we hosted the first-ever Impression Makers Supper Club, a collaboration dinner with a curated menu created between ourselves and Michelin-rated Chefs Jeremiah Stone and Fabian von Hauske Valtierra. This collaboration reinforces our commitment to delivering the utmost excellence in service and culinary experiences while introducing new guests to what an elevated all-inclusive experience can be.
